Your Secret Garden: Your Gut

Like a flourishing garden teeming with diverse plant life, the gut microbiome is a complex landscape that plays a major role in your health and vitality.

Want a thriving garden? Gotta put in the effort to water, feed, and weed it regularly. Think of your body’s gut microbiome the same way. It’s like a garden in your belly, teeming with bacteria, fungi, viruses, and other stuff that keeps you healthy. These little critters help you digest food, soak up nutrients, fight off bugs, and keep your mind sharp and emotions in check.

As a gardener tends to their garden, feeding the soil and keeping an eye on things to make sure the plants stay healthy, we should do the same for our gut microbiome. It needs the right nutrients and attention to stay in balance and function well. If we don’t take care of it, it can get sick, just like a garden can get overrun with weeds or bugs. This can lead to problems like inflammation, leaky gut, allergies, mood issues, and more.

To have a healthy and strong gut, you should eat a bunch of different foods that are good for you. Eat veggies and fruits that are full of nutrients, whole grains, beans, and fermented foods. And don’t forget to drink lots of water! That will give your good gut bacteria the energy they need to grow, and you’ll have a gut that’s so healthy and full of life. Eating healthy and trying new foods can change your whole life. When your gut is happy, you’re happy. It’s as simple as that!

This is a savoury version of French toast with added herbs and vegetables.  Slices of wholegrain bread are dipped in beaten egg, mixed with chopped chives, and cooked in a hot pan with a smear of olive oil. While the French toast is cooking it is given a dusting of grated Parmesan cheese which delivers a delicious savoury crunch to the finished dish.

Method

Preheat oven to 100°C/gas mark 6

Whisk together the eggs and milk and stir in the chopped chives. Pour the mixture into a shallow dish for dipping the bread.

Drizzle a little olive oil over a non-stick pan and heat gently.

Using tongs, dip a slice of bread into the egg mixture, flipping it over so both sides are soaked. Pick up the bread with the tongs, place it into the frying pan and cook for 3 minutes on each side, until the surface is golden brown. While the bread is cooking, sprinkle a little Parmesan cheese over the bread to get an extra crisp, cheesy surface.

When one piece of French toast is cooked, place it on a baking tray to keep in the oven while the other pieces of toast are cooking.

Cook the remaining slices of bread in the egg mixture as above and keep warm in the oven until ready to serve.

Take a second non-stick pan and add another drizzle of olive oil. Add the sliced tomato halves face down to one side of the pan and mushrooms to the other. Strip the leaves from the thyme, chop finely, and scatter over the mushrooms. Stir the mushrooms gently in the pan for 5 minutes until soft. Cook tomatoes until the cut surfaces are just beginning to brown.

Serve the French toast with wild mushrooms, tomatoes, and baby spinach leaves.

Alternative serving suggestion

  • Unsweetened plant milk such as oat, soya or hemp can be substituted for cows’ milk
  • Baked beans could be served with savoury French toast for a quick nutritious breakfast/brunch dish.
  • Chopped spring onions could be used instead of chives

**A personal note: I am gluten-sensitive, I have been living gluten-free since 2014.

I switched out the tomatoes for avocados . . . Yummy!

How To Tell If It’s Wednesday . . .

The Boston Advertising Agency of this commercial was looking for authenticity – so they chose Mary Fiumara, the mother in the commercial, that lived on Prince Street in Boston and the little boy is Anthony Martignetti who also moved to Prince Street from Italy a few years before being chosen for this commercial. Mary was a second mom to everyone in the neighborhood, Anthony said in an article after Mary’s death at age 88 in 2016 – that she would ask him everyday “How you doin’ Anthony?” “can I buy you want an ice cream?” A real South Side of Boston Mom.

When planning a marketing campaign – sometimes the most simple and truest events in life become the best experiences for others to watch. In 1985 Prince Pasta Company tried to recapture that same experience – with failure! It has to be real – it has to be authentic, has to hit you in the heart – enough to share and talk about it. I believe it failed because it did not have the two people that shared a neighborhood, that have that care and concern for each other. My take away from studying this concept of marketing, don’t just look for all the pretty, the glamour, and the luxury of an image or a setup. Yes, it is beautiful to look at, but mix in – The Real – The True – The Simple that speaks to hearts and makes people want to share – just like they share all the cute puppy and baby sleeping images – that’s the real life.

Chocolate Toffee “Crack” (The BEST dessert idea for a party!)

A.K.A. “Christmas Crack”. This quick and easy recipe is a classic that never gets old. Just as the name implies, it’s absolutely addicting! I make it every year for holiday parties and it’s always a hit. It’s made with just 4 ingredients! Then top it with the candy of your choice to fit the season or occasion (M&Ms, candy corn, toffee bits, peppermint, nuts, sprinkles, candy eyes, etc.)

Servings 10

Ingredients

  • 1 sleeve Ritz Crackers (about 16 crackers) (I use the square Town House Crackers – only because they fit better in my pan!)
  • 1/2 cup butter (1 stick)
  • 1/2 cup brown sugar
  • 1 cup chocolate chips
  • candy of choice for topping (optional)

Instructions

  1. Preheat your oven to 425 degrees and line an 8×8 baking dish with parchment paper.
  2. Cover the bottom of the pan with Ritz crackers. It doesn’t have to be pretty! Just fit them in there in a single layer as best you can.
  3. Combine the brown sugar and butter in a pan and bring to a boil. Boil for 3 minutes WITHOUT stirring.
  4. Immediately pour the mixture over the Ritz crackers in your pan. Use a spatula to spread it out evenly over the crackers. Bake for 5 minutes to thicken and set the caramel.
  5. Remove from the oven, and then sprinkle the chocolate chips evenly over the top. Place the pan back in the oven for about 2 minutes or until he chocolate is soft enough to spread.
  6. Immediately spread the melted chocolate chips with a spatula so that you have a nice even layer.
  7. Top with the candy of your choice (optional). My favorite is crushed peppermint candy! You can also try topping it with M&Ms, nuts, sprinkles, etc.
  8. Let it cool for several hours before removing it from the pan and breaking it apart, otherwise it’s a bit of a mess! I couldn’t wait to dig in this time and the chocolate was still runny. Feel free to place it in the fridge for a bit if you need to speed up the process.

Ingredients

  • ¼ cup fresh sage leaves, chopped, plus more whole leaves for garnish
  • 2 teaspoons butter
  • 15 ounces ricotta
  • 10 ounces pumpkin puree
  • 2 eggs, beaten
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • ½ teaspoon pumpkin pie spice
  • Béchamel Sauce aka White Sauce
  • 4 tablespoon butter
  • 4 tablespoon gluten-free flour
  • 2½ cup milk, warmed
  • ¼ tsp ground nutmeg
  • Salt and pepper to taste

INSTRUCTIONS
  1. First, prepare the Pumpkin Ricotta Mixture: Fry the sage in butter until crisp. Remove to paper towel. Then combine all ingredients in a medium bowl. Set aside.
  2. Next, make the Béchamel Sauce aka White Sauce: Melt butter in a medium saucepan over medium heat. Add flour and whisk to cook the flour, about 2 minutes. Slowly add the milk and continue to stir. Bring to barely a boil then immediately turn down the heat. Cook, whisking until thickened for about 3 minutes. Remove from heat. Season with nutmeg, salt and pepper.
  3. Spread ½ cup of the White Sauce over the bottom of a greased 8-inch-square (2-quart) baking dish. Place 2 sheets of no-boil lasagna noodles atop the sauce in a single layer.
  4. Top lasagna noodles with a third of the ricotta mixture. Layer with a quarter of the mozzarella. Then top with a third of the remaining White Sauce. Top sauce with 2 more sheets of lasagna noodles to build the second and third layers the same way.
  5. For the top layer, place last 2 sheets of lasagna over the White Sauce. Top with remaining mozzarella.
  6. Bake at 375° F for 35 minutes, covered with foil. Uncover and bake an additional 15 minutes, until the lasagna is bubbling hot and the top is browning. Remove from the oven and let sit at least 10 minutes before cutting. Garnish with fried whole sage leaves.
